Favorite family dinner in a pinch
Feeling stressed about making a nice family dinner these days? Many families have multiple children in activities, some of course in different locations at the same time.
Can anyone relate? Or…are you just at a loss for making a quick, delicious dinner and sneaking in a little extra time sitting outside in this glorious weather reading a book?? (in a perfect world?).. Well, this meal was always a family favorite and still is. It just requires you to stop at the kosher market or supermarket for fresh ingredients.
Hot open turkey sandwiches with sliced roasted potatoes (you can substitute french fries, mashed potatoes, or any other side dish.) Serve with apple sauce, fresh vegetables, and/ or salad.
Preheat oven to 350 degrees.

From the deli, get about 2 pounds of sliced turkey (not turkey roll or smoked turkey) and have it sliced medium to thick.
Buy a sliced rye bread (packaged light Manischewitz rye works fine, too).
You will need two cans of gravy — your choice — we like mushroom. You can also used the powdered brown gravy mix.
Spray a roasting pan with vegetable spray and pour a bit of gravy on the bottom. Add the slices of turkey, one at a time. Pour a litlle gravy in between the slices now and then.
Finish with the rest of the gravy. Cover with foil and bake for about 10 minutes.
The rye bread can be toasted or served fresh.
For the roasted potatoes:
Get about 15 small red potatoes and wash well.
Slice thin.
Spray a roasting pan with vegetable spray and arrange the potato slices. They can overlap slightly. Drizzle a little olive oil over the potatoes or spray them with vegetable spray. Both work fine. Sprinkle some sea salt and basil over them. (You know which spices your family likes) and place them in the oven. Bake them until they are crispy and brown. You can put the pan under the broiler for a few seconds at the end.
Stack the toasted (or fresh) rye on a plate. The turkey in gravy can be doled out from the baking dish. I would put the potatoes in a nice bowl near the vegetables so when grabbing them, you also remember to eat the healthy stuff.
I guarantee your family will ask for you to make this quick and delicious meal over and over again.
