Dorothy Boroson’s Faux Foie (aka Mock Chopped Liver)

2 large onions, chopped

2-3 tbsp. canola oil

3/4 cup walnuts, chopped

3 hard-boiled eggs

1 #2 can peas (about 20 ounces), drained

Salt and pepper to taste.

Brown onions until very, very brown. Don’t worry if they burn. Pulverize walnuts in food processor. Add onions and remaining ingredients and mix until you reach the desired consistency. Serve with crackers or challah. Olives and pickles wouldn’t hurt. You can even wrap tablespoonsful in lettuce leaves and eat them like Chinese lettuce wraps.
