Blueberry Muffins
Hello everyone. Now that blueberries are plentiful and so delicious, I thought this would be a useful recipe to share. The best news is that blueberries are full of anti-oxidants which are important is one’s daily diet. Every time I eat a blueberry, I think to myself that this is a really healthy and delicious treat. So, why not whip up a quick batch of muffins? Be sure to have some extra berries on hand to eat while making the batter.

Blueberry muffins

3 cups flour
3/4 cup sugar
1 teaspoon salt
4 teaspoons baking powder
2 well beaten eggs
1 cup low-fat milk
1/2 cup oil
1 1/2-2 cups blueberries
Preheat oven to 400 degrees. Sift together flour, baking powder, sugar, and salt. Mix eggs, milk, and oil. Slowly mix in dry ingredients. Gently stir in berries.
Line 24 muffin spots with cupcake liners. Fill half way with batter. Sprinkle a few blueberries on top. Bake for 20 minutes or until a toothpick comes clean.
