What to do with ripe bananas

While getting ready to make my lunch to bring to the office, I noticed three very ripe bananas on my banana tree. This, of course, set off a reminder of my next recipe to add to the blog – so here’s my famous banana bread. It is extremely easy to make and is light in texture. I love that all the wet ingredients go into the blender and you can just imagine how well mixed and frothy it becomes. You can add chocolate chips, walnuts, or raisins, and you can easily double the recipe and make it pareve – your call. Afterward, sit down and make a nice cup of tea and enjoy the banana bread.

Banana bread

1 cup sugar
1/2 teaspoon salt
1 1/4 cups sifted flour
1 teaspoon baking soda
1/2 cup margarine
2 eggs
1 cup bananas (2 small ones)

Preheat the oven to 350 degrees. Sift all dry ingredients. Put all the other ingredients into the blender and put the setting on whip. Fold the liquid into the dry ingredients quickly and lightly mix. Spoon into a small loaf pan. Bake for 40 minutes or until done.
