Delicious dinner…BBQ chicken, salad, and veggies

Who can believe that next weekend is Labor Day already? That means back to school or for some, starting school or leaving for college…where has the summer gone? My family did not take a week-long vacation this summer, however we did enjoy lots of fun weekends. There is still time left for summer .. and dining alfresco (outside). Here are a few quick delicious recipes to prepare. While you are making them, scroll back to find the sangria recipes and really enjoy the rest of the summer vacation.

Cucumber salad

3 cucumbers
1 red onion (optional)
1/4 cup white vinegar
2 tsp. kosher salt
1 1/2 tbsp. sugar
1 tbsp. fresh dill, chopped

Peel and trim cucumbers and thinly slice them. Do the same for the onion if you choose to you one. In a separate bowl, mix all the ingredients, saving the dill for last. Toss in the cucumbers (and onions). Chill well.

Roast vegetables

Zucchini
Red potatoes
Butternut squash
Brocolli
Cauliflower
Red pepper
Mushrooms
Brussel sprouts
Garlic cloves
Kosher salt

Spray a large cookie sheet (or barbecue tray) with vegetable spray. Either preheat your oven to 400 degrees, or light the grill and preheat. Cut the vegetables into bitesize pieces and evenly spread out in the pan. Sprinkle lightly with kosher salt. Check every 10 minutes and turn over the vegetables. Should cook in about 20 minutes.

Barbecue chicken

1 chicken cut in eighths or 6 boneless chicken breasts
2 crushed cloves garlic
1/4 cup olive oil
2 tbsp. honey
2 tbsp. brown sugar
1/2 cup orange juice
juice of one lemon
1/2 tsp. salt and pepper

Mix all the ingredients together, sans the chicken. Put the chicken in a plastic bag with a zipper to close (just makes it easier) and pour in the marinade. Make sure all the pieces are coated. The chicken will taste great if it sits in the marinade in the bag in the refrigerator overnight. Spray the grill with non-stick spray and cook well. With a brush, add more marinade as needed. If you choose, you can use a freezer plastic bag and freeze the chicken in the marinade. Defrost when ready, and wa-la, you will have delicious chicken for your meal.
